Black Bean Soup and Mushroom Philly's

Have you heard someone say, "And then it hit me like a pound of bricks!"  I know that I have used this line a time or two, and it wasn't until today that I found out what it really feels like to get hit by a pound of bricks. Okay may be it wasn't bricks, but it was 3 very heavy shelves!  They all came crashing down on my head as I was trying to fix the bottom one - leaving me with quite the headache for the evening and a big ol' bump to prove it.  Jake was also feeling under the weather when I got home so I whipped up some black bean soup to accompany our Mushroom Philly's. 


Mushroom Philly's - think patty melt without the patty or grilled cheese with mushrooms.  There is a variety of ways to make this.  I started by sauteing onion and garlic. Then add baby Bella mushrooms and 1/4 cup of wine(you could also use broth).  I shredded Fontina and smoked Gouda cheese and added it to the mix.  Sprayed two slices of bread with butter, added my mushroom mixture and grilled until all the cheese was a gooey mess of meltedness! 

I really thought this sammy would be the star of the show tonight but much to my surprise the Black Bean Soup took center stage! 

Black Bean Soup
Ingredients
1 can black beans (drained)
3/4 cup salsa
1 cup Trader Joe's black bean soup(if you do not have access to this add 1 more can of beans)
Dash of Cumin
Dash of Salt and Pepper
1 wedge Laughing Cow Cheese
Cilantro
Chopped scallions
Shredded Cheese

Preparation
1. In food processor combine black beans, salsa, TJ soup, cumin, salt and pepper.
2.Pour into pot and place on low heat on stove.
3.Add Laughing Cow Cheese or dab of sour cream(Greek yogurt would also work)
4. Once warm, pour into bowl and top with cilantro, scallions, and cheese.
