Venison Salisbury Steak and Skinny Mashed Potatoes

Meet my husband - The Deer Hunter!  Every Fall, around the time of my birthday, I am left a widow while he fills his "man" card!  Adorned in camo from head to toe, getting up at the crack of dawn, braving frigid temperatures, hours of sitting, and miles of walking, in hopes of not only seeing the big one, but having the chance to take him down!

 My father also hunts. I remember him leaving our family one weekend a year to fill his tag and our freezer with some deer sticks! Little did I know at that young, naive age that my dad's hunting was merely a hobby, a way to pass time. Being married to an avid hunter, I have learned that it is so much more!  This year our  freezer is full of deer sticks, deer sausage, deer steak and it is filled to the brim with venison burger!

Again I grew up eating some venison meat and since I married Jake it has been taken to a whole other level! I'm a chicken loving girl so learning to cook with venison has been a new experience.  Venison taste very similar to beef and it has tremendous health benefits.  It has fewer calories, less fat, more iron than chicken, essential vitamins B6 and B12, and no additives! Not only is this meat healthy but filling our freezer with venison is cheaper than buying a meat at the market!


With a whole freezer of venison to use before the next hunting season, I made Salisbury steaks and skinny mashed potatoes for dinner!


Salisbury Steak

Ingredients
1/2 pound burger or venison
1/2 cup onion (chopped)
1/4 cup breadcrumbs
1 egg
1 1/2 cup beef broth
sliced mushrooms
2tbsp. flour
3 tsp. worcesteshire sauce
1tsp tomato paste



In pan saute onions and mushrooms

In a large bowl combine burger, 1/2 the onions, breadcrumbs, and egg.

Form into patties and cook.

In a bowl whisk together beef broth and flour.  Add in remaining ingredients.

Pour over burgers and heat on low for 30 minutes.


Serve over Skinny Mashed Potatoes(steamed, pureed cauliflour, dab of sour cream, and 1/2 wedge laughing cow cheese).
