Tag team back again…When Jake and I first started living together dinner time was a team effort. You could find both us in the kitchen sharing the task of slice and dicing! Unfortunately, the busier we get with our careers we are finding that we are rarely home at the same time at night. Therefore, one of us is left to start dinner while we wait for the other to get home.
Last night’s meal was not only delicious but so much fun to make because Jake and I were home, together, and able to tag team dinner! We decided to make breaded pork tenderloin sandwiches with baked sweet potatoes! The quote of the night after Jake’s first bite, “We need to make these at least once a week.”
We started by taking the pork chops and using a rolling pin we pounded them out until they were flat.
Next, I spread a thin layer of Fat-Free cream cheese on each side.
Roll into Italian seasoned breadcrumbs.
Then toss in the oven and bake until golden brown or cook on the stove top.
Top with your favorite condiment – mustard for her, ketchup for him. Enjoy!
