Gyros

I can't say that I have ever tried true, authentic Greek food.  My closest experience to eating Greek  was during my college days at Iowa State - a late night stop to the Gyro-Man parked on the corner of Welch Avenue!   Ah, just the thought makes me nostalgic for my carefree college days!

Jake and I both agreed that Gyros were always a great late night meal, 5th meal if you will,  but the after taste that remained into the next morning always left us with regrets. Lately I have felt like life has been moving a mile a minute and I feel a need to reminisce about the "good ole' days", I decided to whip up my version of the gyro!  These were so yummy(I had seconds) and I am sure that there will be no nasty after taste to deal with in the morning!


Recently I discovered NAAN!  Where has this been all of my life!  Almost every grocery store carries it.  It can be found in the Health area freezer at Hy-Vee or on the bread shelves at Trader Joe's.  This is your wrap (a pita pocket will work too)! Pop it into the oven for 2-3 minutes and it's ready!


But first things first - Start by  peeling, removing the seeds, and dicing 1 cucumber. Place in bowl and mix in 8oz. Greek yogurt,garlic, and a dash of  pepper. I didn't use salt. Jake is not a huge fan of Greek yogurt so I added a teaspoon or two of Caesar Dressing to help disguise the flavor of the yogurt. Place this in the fridge for 30 minutes.

Next,  slice 1 onion and a tomato into chunks.  You can leave these raw or saute them for a  pickyvegetebale eater softer vegetable.


Next, I sprinkled salt and pepper onto my chicken breast and threw them on the grill!  Slice into chunks when done!


While the chicken is on the grill,  slice kalamata olives and combine with  fresh parsley and garlic in a bowl. I think that the olives are what MAKE this dish!  They add just the right amount of saltiness!


Last, assemble your Gyro.  I start by placing the chicken on the Naan, then top with onion mixture, olive mixture, and then add the cucumber sauce.  Finally top with Fresh Feta cheese and roll!  Enjoy!
