To the next 50+ years!


Two years ago (yesterday), I started a new chapter in my life.  
My mother helped me slip into the dress that every girl can’t wait to wear! 

My sister strapped me into my shoes.

My father slowly walked me down the aisle and gave me away to the man of my dreams. 

A new family kindly welcomed me into theirs! 
And my prince charming took my hand, wiped away my tears of joy, and vowed to love me, faults and all, till death do us part!   

We were so excited to have our closest friends and family stand by our side! We also were so incredibly blessed to have such great family and friends make the trip to support us on our special day! 
We also are lucky that our friends and family are willing to try new things and are tad crazy!  Crazy enough to eat LIVE fish!  Yes, I said LIVE fish!  I am pretty sure that Katy loved every minute of this -  she totally earned that koozie!

So why live fish or how did this come about?  Jake grew up vacationing in the Ozarks!  The first time I ever went with him, I was told about an establishment that was known for serving “minnow shots”.  Yes, a shot of your choice with a live minnow to drop in and swallow down!  Of course,his family was not going to let me leave the Ozarks without checking out this establishment, and I was convinced that if I didn’t try the minnow shot, I would not be invited back.  After much pressure and a lot of convincing, I decided to give it a try.  I screamed, I shook, I almost threw up, but I did it and I have every year since.  It’s tradition!



 Jake and I were looking for something to do at our wedding that was unique; something that would take place of the traditional dollar dance,;something that would get people talking, so when Jake’s mom suggested minnow shots it was a no brainer (ok I was nervous and protested)  but I was willing to give it a shot!  Who knew that it would be such a hit!  Two years later, Jake and I still celebrate every anniversary with fish! (I still scream, shake, and gag)



I decided to make a nice anniversary meal for us tonight that did not consist of live fish! We opted for chicken.   This is a must try, especially if you like a little spice!  Smoked Cheddar and Jalapeno Stuffed Chicken wrapped with bacon! 

Start by pounding two chicken breast flat with a meat tenderizer or a rolling pin. Season Chicken with fajita or taco seasoning.

Chop fresh jalapeno peppers and slice up some cheddar cheese.  I used smoked cheddar!  Place in the center of the chicken and roll up.  Secure with toothpick.

Wrap with bacon and bake for 40 minutes in a 375 degree oven.  Remove toothpicks and enjoy! 


Now I am off to enjoy a semi-homemade anniversary cupcake with my love!  Here is to the next 50 + years of love, laughter and happily-ever-after!

    I also used to make a chicken wrapped dish that was good, but not good for you. I wrapped a chicken tender with dried beef, then bacon, and baked them in cream of chicken soup mixed with sour cream, and served the sauce it made with noodles or mashed potatoes. This is very good! maybe you can make it healthier!
