Enter anxiety. I have spent my last week of summer vacation finishing my summer “To Do” list! Most of my list is complete, at least the important things, and tomorrow I will officially start the 2011-2012 school year! It has been a great short summer.
This was the first summer since I was 14 that I did not work full time. I tutored a few students and took some classes, but the last two weeks have been sheer bliss as I have had nothing on my agenda! Now I know what I have been missing out on all these years - relax, clean, organize, watch bad T.V., repeat!
To celebrate the end of my summer I prepared a fabulous dinner tonight. As many of you know, the Midwest has been experiencing an insane heat wave therefore cooking has been pushed to the way side the last few weeks sans the 90 + degree weather. I decided that tonight, in spite of the heat, we were going to cook and use the oven. Gasp - Yes I know that there are rules against this during times of extreme heat. Oh well! Tonight we had Oven Fried Chicken and Garlic Parmesan Tator Tots! This meal was husband approved and it is a great freezer meal!

Oven Fried Chicken
Ingredients
4 chicken breast
1 box Melba Toast
Dash of Olive Oil
2 eggs
1 tablespoon honey mustard
1tsp. cayenne pepper
1tsp. thyme
1tsp. garlic powder
1tsp. oregano
1. Preheat oven to 400*
2. In food processor pulse crackers then add a dash of Olive Oil and pulse again.
3. In shallow baking dish combine eggs, mustard, pepper, thyme, garlic powder and oregano with a fork.
4. One chicken break at a time dredge in egg mixture and then coat with crackers on each side.
5. Place on foil lined pan and bake for 40 minutes.
