Ho-Hum, that describes my day! It is a rare occasion that I don't leave the house during the day, but today was one of those days! I have been pent up in this house all day but it was worth it. I hate coming home to a messy house(especially after vacation) so I spent the day cleaning and organizing. Jake and I have very distinctive chores in our house! I usually do all the cleaning and (indoor)cooking. He takes care of the yard work and my least favorite chore laundry!
I despise laundry, but I decided to try to earn some brownie points with the hubs and spent my day washing, drying, and folding laundry! Boring! At least I got to watch one of my favorite childhood movies while I did it!
After I won the laundry battle, I moved on to dinner! I got this recipe idea from a website last week, but I forgot to write it down so I tried to make it based on my memory tonight! Either I have a great memory or I am really innovative! The taco seasoning gives it just the right amount of spice while the cornbread adds a hint of sweetness!
Tamale Pie
Ingredients
1 lb. ground beef
1 packet taco seasoning
1 can diced tomatoes (drained)
1 can black beans (drained)
1 can corn (drained)
1 cup shredded cheese
1 package Jiffy cornbread mix
1/3 c. milk
1 egg
Preparation
1. Brown burger and add taco seasoning
2. In medium saucepan combine meat, beans, tomatoes, cheese, and corn.
3. Warm for 5 minutes.
4. While you wait prepare the cornbread mix.
5. Pour the meat mixture into an 8x8 pan.
6. Top with cornbread and bake for 25- 30 minutes or until bread is golden brown.
7. Allow to stand 5 minutes before cutting.
