Cookies, Candy, and Fish!

Today has been a super productive day!  I set off bright and early this morning for my classroom for a tutoring session, but not before making a blended coffee smoothie, using my new Body by Vi protein powder!  It tasted just like an iced coffee - so yummy!


I was hoping to get some copies made of a unit I am putting together for this year, but of course technology – the copier – wouldn’t cooperate.  In my frustration, I almost had an Office Space moment, but I refrained.  Not feeling that I accomplished much I decided to call it a day and set off for home.  

Jake and I are preparing for our vacation, which cannot come soon enough, so I decided to bake some cookies for our trip using my mom’s recipe! Mmm!  


Jake came home just in time to grab a spoon full of cookie dough.  I think he would be happy with just the bowl of dough – forget the baking part!


While the cookies were baking I also decided to try my hand at some candy making!  As I was cleaning out our kitchen cabinets last week, I found some candy molds that my mom passed down to me.  I bought some melting chocolate and peanut butter and created these fun shell shaped candies! Perfect for freezing and much cheaper to make than buying Reese's Cups! 


My sweets loving husband would have been happy to settle for cookies and candy for dinner, but luckily I had dinner covered too!  We had tilapia foil packs, brown rice, and green beans!  This meal was so easy to make!


Tilapia Foil Pack
Ingredients
Tilapia Fillet
Lemon, slices
Orange, slices
Lemon Pepper seasoning
Foil

Preparation
Sprinkle Tilapia with lemon pepper
Spray foil with cooking spray
Place fish on foil and top with citrus slices.
Bake at 375* for 15 minutes.


What is your favorite kind of cookie?

I love warm chocolate chip cookies straight out of the oven!
