Celebration Time

It’s celebration time!  Three reasons to celebrate:

Celebration 1:  Today was my last day of work until August 3rd.  The end of the school year is always bitter sweet!  I am lucky and I get to keep my students for 3 years so I know that many will return to my classroom in the fall, but it is always sad to say good-bye to students who you have had for 3 years that are moving on!  Packing up our classrooms, shoving everything into a closet, completing paper work, and cleaning are things that make today a celebration! My to-do list for school is complete!

Celebration 2: I have tomorrow off and it’s Friday! Enough said!

Celebration 3:  Exactly 2 years ago I had back surgery!  Hard to believe that it has been two years, right?  I still remember sitting in the doctors office, crying my eyes out, as he told me that I had the back of an eighty year old, the worst he had ever seen in someone my age, and that I needed surgery and fast!  It was May and I was getting married in September.  Surgery did not fit on my to do list. Being in a back brace with limited movement did not fit into my schedule. And getting my brace off the day of my wedding, if everything went right, was worrisome. But  there was really no other choice and to this day I am so happy I made the decision to have it. I am mostly pain free and have been able to return to many of the activities I enjoyed before my surgery!

To celebrate the beginning of summer I decided to fire up the grill tonight! My original plan was to have a hot dog bar with all the fixings but changed my mind and whipped up some good ol’ bacon cheeseburgers with homemade guacamole and potato salad. Hello Summer!


Homemade Guacamole
Ingredients
1 avocado
1 roma tomato, chopped
1 slice of onion, chopped
dash of salt
squeeze of lime juice

Prepartion
1.     Mash avocado.
2. Add all other ingredients and stir.

Homemade Potato Salad  
Ingredients
5-6 red potatoes, quartered
1 tsp. pickle relish
½ cup mayo (or greek yogurt)
¼ cup ranch dressing (I used less and tasted before adding more)
Dash paprika
Dash celery salt

Prepartion
Boil potatoes and let cool.
In bowl mix remaining ingredients.
Add Potatoes and chill 1 - 2 hours.
*Note:  I used 1 cup mayo which was too much - reduce to 1/2 cup)


Ha, as if I could sit still this summer.  My June Cadre classes start on Monday and will be tutoring this summer!  I am looking forward to July - no plans besides the lake! What are you looking forward to this summer?
