Another Great Weekend

Weekends seem to go too fast!  It seems that summer has abruptly decided to arrive.  We could never just easy into it, we start right at 90 degrees plus humidity.  There were tons of outdoor activities happening in Omaha this weekend that I was excited to partake in, but as the heat index rose Jake and I decided we were not in the mood to battle the heat, the crowds, or search for parking.  Instead we decided to grab a late lunch at Baja Grill and take in a movie!


Baja Grill is new restaurant with Mexican and California infused flavors!  The modern décor is relaxing, warm, and inviting, but the restaurant itself is a bit tricky to find!

 As made our way to our table the server plopped a large basket of homemade chips on to the table and to our surprise, instead of salsa, it was served with Baja slaw – a vinegar based coleslaw.  I am a sucker for chips and salsa so I was slightly disappointed, but the chips and slaw was a good.  Not long after ordering, our food came out piping hot!

Seafood enchilada with black beans for her.  This was more food than we could eat, but we were both  extremely happy and plenty full with our meals. Definately a meal that did not disappoint and if you live in the area - check it out!

Our next stop was the movie theater! We were off to watch The Hangover II.  The first Hangover movie was hilarious so I was hoping for big laughs from this one too!  Unfortunately I was disappointed. The plot was similar to the first; there were some great one-liners, but it just feel short in my opinion. 

Today was a scorcher.  Jake and I did some yard work, took a short walk with the dogs, and cooked up some yummy sweet-chili steak wraps for dinner.  To help cool us off after a day of pulling weeds we picked up some ice cream for dessert!

Sweet Chili Steak Wraps
adapted from Franks Red Hot Recipes

Ingredients
Steak
Romaine Lettuce, chopped
Avocado, chopped
Tomatoes, chopped
1/4 c. Italian Dressing
1/2 c. Sweet Chili Sauce (Franks or Trader Joe's)
1/4 c. Greek yogurt or mayo

Preparation
1. In bowl combine Italian dressing and 1/4 c. chili sauce.
2. Marinade steak in mixture for 1 hour.
3. Grill steak to liking and slice.
4. Mix mayo/yogurt and remaining chili sauce and chill.
5. Spread 1 tbsp. mayo mixture on tortilla, top with steak and veggies.
6. Roll and enjoy!
