Back to School...


Today was my LAST first day of school (hopefully forever)!  A few weeks ago I was offered the opportunity to attend Doane College as part of their Educational Leadership Cadre program. This is definitely something that I have wanted to pursue for a while but I have been apprehensive and not quite sure about my decision for weeks now and I'm not really sure why. As I hit the road today I was a ball of nerves. I tried on 3 different outfits before leaving the house - really? Unlike my masters in Curriculum and Instruction, I actually have to step foot on campus for this masters. (Katy, Kendall and Hugh - I still have not stepped foot on UNK ground but I am sure my tuition served them well!) 

Wow! I am so happy with my decision!  I am so impressed with the amazing group of professionals I will get to know and work with for the next two years!  I love that I will personally get to know my professors, and the work I will be doing will not be additional but supplemental to what I already do as an educator! I can’t wait to go to class tomorrow!


Ok enough about school.  When I got in my car this afternoon it was a steaming 98 degrees! 98 degrees, it's only June!  Getting up 5:30am(during summer break), commuting 45 minutes to Lincoln, sitting in class until 3:30pm, and the sticky weather is enough to wear this girl out.  Lucky for me there was a Starbucks on my way out of town to give me a little pick-me-up for the drive home and the energy I needed to finish my homework, prep dinner, make lunch tomorrow and chop up some fresh fruit for dessert! 

Tonight Jake and I had steak fajitas for dinner with a side of rice and beans!  Due to the weather, I wanted to do everything in my power to not have to create any extra heat in our house so Jake cooked the entire meal on the grill except for the rice, which was done in the microwave!  These fajita’s were so simple – seasoned peppers, onions, and bacon wrapped filets - grilled to perfection and served on a low-carb tortilla with cheese and sour cream!  They total made a great day even better!




Living in the Mid-west it is certain that we will encounter HEAT.  I hate using my stove or oven when it is extremely hot out!  What are your go to meals on hot summer days?
