Getting use to my alarm going off at 5:15 each morning is hard. Extremely hard! I don’t even get up that early during the school year! To those of you who get up that early - bravo to you. How do you do it? Today I visited Crete, Nebraska to do some team building activities on their challenge course. Doane’s main campus is beautiful and kind of made me nostalgic about my college days at Iowa State! We also got to stand in the exact spot where our graduation ceremony will be held in 2 years! I have yet to attend a college graduation. Maybe this will be the one!

I was exhausted by the time I got home but I had a few hours worth of homework to work on. I am so happy that tonight was an easy peesy meal on our menu because I had little energy to cook. Tonight we made Pesto Chicken and Bacon Pizza. It took about 20 minutes and wa-la, piping hot pizza in my belly! I have an early date tonight with my pillow. I need to get ready, as I would hate to be late for this fun evening I have planned.
Pesto Chicken Pizza
Ingredients
Pesto Sauce (you could make your own but I used Trader Joe’s)
Grilled Chicken, cut into strips
Pre-cooked bacon
¼ red onion sliced
Fresh Mozzarella, sliced
Prepared Pizza crust
Preparation
1. Spread pesto on pizza crust.
2. Cook chicken, slice and place on sauce.
3. Warm bacon in microwave, crumble, and place on pizza.
4. Slice onion and place on pizza.
5. Slice fresh mozzarella and spread on top of pizza.
6. Bake at 425 degrees for 15 minutes or until cheese is golden brown.
