A Walk on the Farm


I need a bigger dog! No, not really – I couldn’t handle another dog right now!   I jokingly tell Jake this every time I try to take our dogs on a run with me, which usually turns into a fast paced walk.  Jake and I have two dogs – a West Highland Terrier and a Jack Russell terrier!  I love my pooches, but their little legs just aren't meant for jogging! 

It was a gorgeous, I emphasize gorgeous, day here! After dinner I decided to take our dogs for a much needed and well deserved walk!  It was getting late so instead of loading up the dogs and driving the .5 miles to the lake, I decided that we would walk around the farm.  Yes, I said farm! Jake and I live on farm – a tree farm that is! The dogs could care less where we walk, they are just happy to be going!  Tucker and Zoe were running for the door before we could even get their harnesses and leashes on them! Gosh, you’d think that we NEVER walk them for how excited they were tonight!  We walked until the sunset and now the dogs are plopped on the floor, panting their little hearts out! 

I made stuffed peppers tonight for dinner!  These are so simple to make and low-carb, which is just the kind of meal, I need this week since I will be breaking out my swimsuit this weekend – ugh. I'm so not ready for swimsuit season!

Stuffed Peppers

Ingredients
2 bell peppers
½ lb. ground beef
1/4 c. onion (chopped)
1 clove garlic (chopped)
1 jalapeno (chopped)
1 c. petite diced tomatoes
¼ c. tomato paste
Dash of chili powder
Dash of red pepper flakes
1 c. shredded cheese


Preparation
1. Preheat over to 375*.
2. Sautee onion, garlic, and jalapeno for 2 minutes in skillet and remove.
3. Brown beef and season with spices.
4. Add onion, garlic, and jalepeno to beef and add tomato paste and tomatoes.
5. Cut tops off peppers and remove seeds.
6. Alternate meat and cheese layers into pepper.
7. Top with more cheese if desired.
8. Place peppers into shallow baking dish, fill with ¼ c. water and bake 30 minutes or until peppers are soft.
