Everyone knows the saying April showers bring May flowers – well could someone please inform Mother Nature that it is May? Our class picnic was scheduled for today! Yes, 3 hours of fun and the sun! The kids play, we eat, then hey play some more. A teachers dream when it is this close to the end of the school year. Let them burn off that energy! We went outside, we played, we began to eat, and then Mother Nature invited herself to our party and decided to park a big ole rain cloud over our fun! Inside we went to finish lunch and then what? It was noon and I had nothing in my lesson plans until 2pm.
For those of you who know me I am a planner. I not only have plans, I have back up plans and my back-up plans usually have back up plans. I didn’t have one today so after a few minutes of brainstorming I decided to let my students continue to play inside and then I showed a video on what makes rain!
Two hours of craziness was enough to wear me out for the day! I got home and wanted to plop down on the couch but we are going to the lake this weekend so I mustered the energy to work out. Tonight is the Biggest Loser Finale so what better way to prepare than with my favorite Jillian Michael’s video. Followed by Biggest Loser Weight Lose Yoga.
After my workout I whipped up a low-carb meatloaf and decided to make a cold pea salad replacing the mayo with plain Greek yogurt and a dash of splenda! Well I am off to watch the Biggest Loser Finale – I don’t follow it regularly but love watching the transformations on finale night!
Ingredients
Frozen or can peas
Cheddar or Mozzarella Cheese (cut in chunks)
6 oz. plain Greek Yogurt (this might be too much. 3oz. might be fine)
1tsp. Splenda
Preparation
Combine all ingredients and refrigerator for 30 minutes.
