This weeks mission (one of them)


Jake and I are leaving for the lake in a few days so this week is “Mission Clean-Out the Fridge”!  I came home a surveyed the fridge for perishables that needed to be used up!  A few nights ago I chopped peaches and mangos for my morning smoothies. I wanted to created a meal based on these but what?  Then I saw this gem sitting on the top shelf!


A few weeks ago I made my weekly run to Trader Joe’s. This beauty was sitting on a shelf beckoning for me to take it home, so I did.  It is very similar in texture to an apple butter! 

(Side note - I have been in love with TJ’s since I was first introduced to it in California when I was 12. I visit it every Friday)

Enter inspiration!  I decided to use the fruit mixture and mango butter to make a peach, mango reduction sauce!  

I seasoned some pork chops with my new favorite seasoning and baked them for twenty minutes(165* in the center)

Top with the reduction sauce and enjoy!
