EPIC Failure!


Writer’s Block – ugh.  It happens to the best of us - and no I am not having Blog Block.  I have been struggling the last few days to write a 250 – 500 word essay for a graduate program application.  It is the only thing holding me back from turning in the application, so hopefully I will stop being overly critical and it will be mail ready tomorrow!

Epic Failure
Now that I have that off my chest, let me tell you about my EPIC failure tonight!  Tomorrow is our school’s annual volunteer luncheon.  Teachers provide salads, appetizers, and desserts for lunch to honor the parents and community members that volunteer to help throughout the school year.  I volunteered to bring Buffalo Chicken Dip and Rum Cake.  Both are very simple and quick to make, but lately I have been struggling with my Rum Cakes.  The last two times I have made them, I have struggled to get them to come out of the pan without breaking into pieces.  But tonight I sprayed every nook and cranny of the pan; I took my cake out of the oven, cooled it halfway, and placed it upside down. Then I crossed my fingers and prepared to take it out of the pan. It STILL took shaking, banging, and some choice words to get it to come out the pan and it landed in a heap. So disappointing. 



Pan I should have used
I am beginning to think that it is the cheap pan – should have used the pretty one that my mom bought be a few years ago!  Well, it looks like I will be stopping at the grocery store on the way to school to buy a pre-made dessert.  Jake is happy though, he gets to nibble on the “perfectly fine, except the way it looks” rum cake this week!  I guess this is a good excuse to keep making it for fun – practice makes perfect right?!


What is your “go to” appetizer or dessert? 

I love trying new appetizers and dessert recipes, but lately my go to recipe has been my buffalo dip and my pepper jelly cream cheese log!
