Time. It is something we all want more of and today/tonight has seemed to fly by! I got home from work later than I anticipated, not sure what kept me, but I strolled in at 6:30pm and decided to get started on dinner.
I began chopping veggies to roast for dinner and I noticed I had a lot of tension in my jaw and shoulders and it continued to ache while I prepared dinner. I popped the veggies in the oven to roast and decided to do what any normal individual would do drink a glass of wine exercise. I threw in my Biggest Loser Weight Loss Yoga, rolled out my yoga mat, and went to work! Wow, what a workout! Who knew that yoga not only relieves stress but also makes you sweat!
My workout was the perfect tension reliever and I finished just in time to pull the veggies out of the oven and start grilling the chicken. For dinner we had a simple meal - Grilled Chicken and Roasted Veggie Panini with a southwest chipotle pasta salad! Another fresh, simple, and filling meal!
Grilled Chicken and Roasted Veggie Panini
Ingredients
2 – 4oz. chicken breast
Ciabatta bread, sliced
Eggplant, round slices
Green Pepper, sliced
Tomatoes, sliced
Red Onion, sliced
Swiss Cheese
Avocado, sliced
Preparation:
Preheat oven to 400 degrees.
Line cookie sheet with foil.
Place veggies (except tomato) on foil and roast for 20 minutes or until soft.
Add Tomatoes and roast 10 more minutes.
Grill chicken breast. Season if desired.
On bread arrange cheese, avocado, roasted veggies, and chicken.
Place on grill until cheese is melted.

I love to run around the lake near our house during the spring and summer. When I need a quick workout I turn to my collection of Fitness Videos! I love them because I can get a quick workout in and still feel it in the morning!
