I Think I Can....

I think I can, I think I can, I think I can….I remember my dad reading the book, The Little Engine That Could, over and over to my sister and I when we were young!  These famous words are still my favorite today and have always helped me overcome and push through trying times! I feel like this week these words have been my saving grace! 

We are exactly two weeks away from the end of the school year!  2 weeks – I think I can.  Our school is making some changes for next year - I think I can. I have an interview this week for my next and final Masters - I KNOW I can.

In two weeks my “I think I can” will change to an “I KNEW I could”.  Until then some good old positive thinking and comfort food will have to do!

Thai Peanut Noodles
Ingredients
1 chicken breast (cubed)
Rice Noodles
shelled edamame
stir fry veggies (carrots, snap peas, mushrooms)
1 egg
1 tsp. sesame oil
1 tsp. crushed peanuts

Sauce
¼ c. lite soy sauce
¼ c. rice vinegar
4 tsp. sugar ( I use splenda)
1 tbsp. peanut butter
2 tbsp. water
2tsp. chili garlic paste

Preparation
1. Combine all ingredients for sauce and microwave.
2. Prepare noodles as suggested on box.
3. Cook chicken and set aside.
4. In bowl combine sesame oil and egg.  Scramble and cook.
5. Set egg aside and cook veggies and edamane.
6. Add egg, chicken, and noodles.
7. Pour sauce over noodle mixture and cook additional 4 minutes.
8. Top with crushed peanuts and serve.
