A big sigh of relief!


Today is a day to celebrate!  Nebraska Lawmakers are coming to their senses and are not going to cut teacher pay by 15%(whew) and my interview went better than expected today!  It went so well that they accepted me into the Cadre Program on the spot!  As exciting as this is, one must know, I am not the kind of person that does well with “on-the-spot” decisions.  I like to take time to think things over, weigh out the pros and cons, discuss my thoughts with my family, and then when I am confident – make my decision.  I wasn’t expecting to get into the program this year, let alone this summer so I am now stuck trying to decide if I should give up my summer commitments of tutoring and teaching to start the program.  I know that this opportunity is too good to pass up so I guess I am now officially starting the next chapter!

I am not sure what Jake is more excited about: my news today or his new toy!  Jake has been doing side jobs and saving his pennies for a new hunting toy.  He ordered it last week (without telling me) and it arrived today.  I can’t say I am thrilled about his purchase (I prefer shoes or vacation) but it was his hard earned money so I couldn’t stop him. I figured if he got to buy a new toy then he owed it to me to make dinner - minus the homemade fries!  Tonight we made a meal that Jake recreated after watching a show on Food Network and I must say he is better at making it than me! 


Juicy Lucy’s
A Juicy Lucy is a similar to a cheeseburger except the cheese is stuffed into the burger.

Ingredients
8 small Hamburger or Venison patties
Dash of Worchestershire Sauce
Favorite Seasoning
Cheese – cut into cubes

Preparation
1. Mix burger, worcheshire sauce and season in bowl.
2. Form mixture into 4 - 8 patties. (depends how big you want your burger)
3. Place cube of cheese on 4 patties.
4. Place patties without cheese on top of patties with cheese.
5. Press together and grill.
6. Top with lettuce, tomatoes, onion, mushrooms, etc.

In celebration of all the good news, we busted out the Girl Scout cookies from the freezer!  It’s a really good thing that these only come around once a year!

I am sucker for Thin Mints and Carmel Delights!  I love to eat them right out of the freezer!

  2. I have never been able to keep cheese inside of my juicy lucy's!! Congrats to you, the picture of your buger is amazing!
