Broiled Egg Casserole

  I woke up this morning to a rumbling in my tummy!  Apparently Jake did too because his first question this morning was "What's for breakfast?  Usually our Saturday morning breakfast consist of cereal or smoothies, but our growling stomach's were in need of a heartier meal!

Searching our barren cupboards and refrigerator, I mustered up a jar of homemade salsa, black beans, frozen corn, eggs, and shredded cheese!  Everything you need for this easy dish.

I began by mixing the salsa with the black beans and corn.  Then I zapped it in the microwave for a few minutes.


Next, I browned some ground breakfast sausage.



In a small baking dish fill with the meat.


Then layer the salsa mix.


Crack an egg over the top.


Sprinkle with cheese.


Place in the oven and broil for 4 - 5 minutes!


Serve with fresh fruit or toast!


Broiled Egg Casserole
Ingredients
1/2 pound ground sausage or beef
4 eggs
1 1/2 cup salsa or fresh cut tomatoes
1/2 cup black beans
1/4 cup corn
Shredded cheese

Preparation
Preheat oven to 425*
Brown the meat in a small pan.
Combine the salsa, black beans, and corn. Microwave for 2 - 3 minutes.
Spray small baking dish with non-stick spray.
Layer meat and salsa in dish.
Crack one egg on top of layers.
Sprinkle with cheese.
Turn oven to broil setting and broil for 4 minutes(for running eggs). Broil longer for hard eggs.

*Makes 4 servings.
