Thanks for sharing!

I love summer salads!  I have been waiting patiently for our garden to start producing fresh vegetables so I can whip up fresh, yummy salads and start canning salsa!   

One of my favorite summer veggies is cucumbers. I love them in salads or dipped in hummus, and they are super refreshing in a bottle of water!   Jake and I planted an abundance of these in our garden, but unfortunately we have yet to find a single one growing in our garden!  Bummer!

Then a great thing happened!  No, nothing started to grow - but a teammate of mine at work walked into my classroom the other day and offered to share some cucumbers from her garden! (Thanks for sharing)  I couldn't wait to get home and slice them up!  As I was slicing, the distinctive smell made me think of a great cucumber salad that my grandmother used to make! I never really appreciated this salad until I entered my 20's!  
Love using canning jars to hold salads!


I quickly warmed vinegar, water, and sugar in a pan.  I poured it over the sliced cucumbers and red onion.  Seasoned it with pepper, salt, and fresh dill! And chilled it for an hour!   I can't get enough of this salad! Each bite makes me reflect on the great times I have spent with my grandma!  She's a pretty special lady!  

More cucumbers and memories please!
