Yay, we are one day away from a long weekend!
Fourth of July weekend is bitter sweet for me!
I go home only 3 times a year and Fourth of July weekend is one of those weekends!
Making the 5-½ hour trek across Iowa can be painful but the reward of seeing my family is oh-so worth it! It'll be hard to wait patiently for Jake to get off work tomorrow. Fourth of July also makes me sad. For a teacher, the Fourth of July is a reminder that our summer is almost over.
I begin work the first week of August so here's to the next four weeks

Since Jake and I will be out of town this weekend, tonight was a “Use It or Lose It” dinner night! I found this bad boy at the supermarket for $3!
We needed to use up: asparagus, an avocado, corn, and tons of fruit! We decided to grill everything! Yes, even the avocado (just sprinkle with lime juice and salt). We made a watermelon, basil, and mozzarella salad for desset!
I started by seasoning the steak with olive oil, garlic salt, and cracked pepper. When grilling - timing is everything. Here is how I time my steaks to come out Medium!
Set grill on high. Place on grill for 1 minute, rotate 45 degrees and grill for 3 minutes flip and repeat. Let sit for 5 minutes before cutting into the steak!
Look at this meal – way more than I could eat!
The avocado was so soft and flavorful from the grill that I decided to mash it up and put it on my steak! OhMyGosh – better than steak sauce!
