Portobello Sandwiches!

Whew!  It is hot out there!  Unfortunately I did not have a chance to soak up the sun today.  I spent most of my day waiting….  Waiting for my sweet ride to get serviced so Jake and I can make the 6 hour trek back to see my family this weekend!  Once I got home it took all my will power to stay inside and complete my final paper for my grad class.  Three pages and three hours later - I’m done!

And just in time for dinner!  Since it is so stinking hot, I decided to cook our entire meal on the grill!  I don’t know if my meat-loving husband even realized our meal was completely meatless! It was that good! What was on the menu? 
 Open-faced Portobello Mushroom, Pepper, and Cheese Sammie with asparagus and campfire beans!  I love using Portobello mushrooms.  They are full of flavor and hearty enough to mimic a burger.


Portobello Sandwiches (serves 2)
Ingredients
2 Portobello Mushrooms (clean out gills)
¼ cup Teriyaki Sauce or Sweet Chili Sauce
1 green pepper, sliced
½ red onion, sliced
2 sliced provolone cheese
2 thick slices of bread

Preparation
1. In Ziploc bag combine sauce and mushrooms.  Marinate for 30 minutes or longer.
2. Warm grill
3. Use a grill pan or wrap peppers and onion in foil and cook until soft.
4. When pepper mixture is about done add Portobello.
5. Grill each side about 5 minutes.
6. Add cheese to mushrooms and melt.
7. Place bread on grill to toast.
8. Assemble: bread, mushroom, green peppers, and onions.
     Enjoy!

What is your favorite meatless meal?

One of my favorite meatless meals is veggie sandwiches of any kind! Grilled, roasted veggies with melted cheese or  crisp vegetables - cucumbers, tomatoes, alfa sprouts, avocado wrapped in lettuce!  Yum!
