Lately Sundays have become one of my favorite days of the week! What’s not to love: sleeping in, browsing the newspaper/ads while sipping coffee, enjoying the outdoors, lounging around the house, but most importantly enjoying Sunday Brunch!
One of my favorite memories from my childhood was getting up on Sunday, dressing in my Sunday best and heading to church with my family. My favorite memory is not necessarily of going to church but much of this memory comes from what happened after mass – Breakfast! Once we were home my sister and I would change into our play clothes while my mother and father shared responsibilities in the kitchen making breakfast. Eggs, hash browns, bacon, breakfast sausage and toast topped the menu. It was neat to see my parents cooking together and the meal come to life. With my mom’s varying work schedule this was one day of the week that we really got to spend as a family!
I have tried to carry on this tradition in my marriage! Since Jake works Saturdays, I look forward to spending Sundays with him! I usually let him sleep in (our dogs don’t always cooperate) while I sneak away to get the Sunday paper and a cup of coffee. Unlike my parents, normally I cook our Sunday brunch and call on Jake to help with the eggs (see previous post). Today I made one of my favorite breakfast dishes: Huevos Rancheros. It is so simple to make, low in carbs, and very filling!

1tbs. olive oil
1 can black beans (drained)
1 can petite diced tomatoes (with juice)
1 can chopped green chilies
1/2 c. diced onion
1 c. diced potatoes (I use frozen hash browns)
Cooked Bacon or Sausage links(if desired)
1 tsp. cumin
1 tsp. chili powder
1 c. shredded cheese
4 eggs
Preparation
1. Preheat Oven 375*.
2. In skillet warm oil and sautee onions.
3. Add potatoes to skillet and cook until soft.
4. Add black beans, green chilies, tomatoes, meat and spices to skillet and simmer for 15 minutes.
5. Pour mixture into single serving ramekins. A small baking dish will also work.
6. Crack two eggs on top of tomato mixture. (2 = ramekins 4 eggs = baking dish)
7. Bake 5 minutes in oven or until egg is beginning to whiten but still a bit runny.
8. Top with cheese and broil 2 - 3 minutes until eggs are cooked.
9. Serve with toast for dipping into eggs!
(Note: This recipe makes more potato mixture than 2 people can eat so I freeze half and thaw for later use)
