Menu Planning 101


“What do you want for dinner?”  Before Jake and I began menu planning this was a common text I would send Jake almost daily.  Finally out of frustration I decided we were going to start menu planning.

I will admit the process to start menu planning can be overwhelming but after a few months it is now something that I look forward to!  In a nutshell here are the main steps to planning a monthly menu.


1. Begin a recipe binder.  Place new or old favorite recipes into binder by category (beef,   
     chicken, seafood, etc.) 
2. Keep an active list (Table of Contents) of recipes by category in the front of the binder.
3. Use a blank calendar to fill in meetings, weddings, events, etc. for the month.
4. Use the Table of Contents to fill in calendar with meals for the month.

Jake and I shop for groceries on Sunday.  We pull out our menu, make our grocery list, and compile our coupons.  Check out my new handy dandy book!  It stores my coupons in 3 compartments (food, cleaning supplies, and bath/beauty), has a pad for my grocery list and fits nicely in my purse!


Menu planning has helped us cut our grocery bill in half by using coupons and watching sales.  More importantly we eat more nutritious and healthy meals now!  I also spend less time in the kitchen because I can prep a lot of the meals for the week on Sunday evening!

 Greek Burgers

Ingredients
1 lb. beef or turkey burger                                        
Sundried Tomatoes (chopped)
¼ cup feta cheese
¼ cup red onion (chopped)
1 tsp. capers
Balsamic Dressing (I use my homemade but store bought would work)
Spinach
Tomato (diced)

Preparation
1. In a bowl combine burger, sundried tomato, feta cheese, onion, capers.
2. Form into Patty and Grill to liking.
3. Place a thin layer of fresh spinach onto plate.
4. Add diced tomatoes and burger.
5. Drizzle with Balsamic dressing
6. Dig in!

This recipe makes about 5 - 6 burgers.  Each patty is about 300 calories.  The leftovers go with us to work for lunch!
