Mama Said There Would Be Days Like This...

Today while I was working with my students on part of their Mother’s Day gift we began to brainstorm a list of sayings that their mothers have shared with them.  As I wrote the ideas on the board, a student shared, “My mom always tells me that sometimes things don’t always go as we planned.”  Lets just say that this quote sums up my day!

One of the things that I like to take pride in is being organized! I live for making plans and updating my calendar.  Unfortunately my day today did not go as I had planned. 

Good Things About my day:
1. Called my mom on my way to work and had a great convo!
2. Went on a mile walk with my students.
3. Had a great, informative meeting after school.
4.  Skinny Iced Celebration de Mayo Latte from Scooters on the way to my meeting.
5.  Happy Hour with friends after work.


Not so Good Things about my day:
1. Woke up thinking it was Thursday.
2. Great convo with my mom made me forget to eat breakfast.
3. Forgot about an assembly and had to rearrange all of my lesson plans for the day (hence thinking it was Thursday)
4. Forgot to prep dinner this morning and start the crockpot.
5. Jake’s truck needed new brakes and other odds and ends.

I honestly felt like today was moving so fast that I was holding on for dear life! And the rest of the week isn’t looking much better, but I keep telling myself that it is "THAT time of the year"! (Fellow educators, you know what I am talking about). Thankfully Jake came to the rescue with dinner and threw the pork lion I intended to make in the oven. When I came home I warmed up some of my homemade apricot habenaro jam and poured it over the lion.  You could do this with any jam or preserve to add quick flavor to a lion or roast. Raspberry jam is great for this!



Tomorrow is Cinco De Mayo – Will you be celebrating?  What will you do?

I learned at Happy Hour tonight that Mexico doesn’t celebrate this day but we sure love to in the U.S.!  Jake and I have nothing exciting planned, just vegging at home with a new Mexican dish to try!  Hopefully I won’t forget this time!
