Feliz Cinco de Mayo! Today is a great day to celebrate not only Cinco de Mayo but my first class towards my 2nd masters is in the books! I finished my first 3 credits! Big whoop right? But I feel like I have been going to school forever. Come to think of it I have! I have been enrolled in a higher education institution for the last 8 years! 8 years - almost a decade! Most people are doctors after eight years!
Since I was little I knew in my heart I wanted to be an educator so why I entered college with the idea that I would go into the medical field is still a mystery to me. I am thankful that I had the opportunity to work as a tutor for a local school district when I was in my second year of college. I walked through the front door of the elementary school and by the time I left I knew that I was in the wrong major. The next day I made an appointment with my advisor. After college I taught in Europe and found a deeper passion for education! When I returned to the US I found a job and completed my first masters. Most sane people would be happy to have a masters and thrilled to devote their time to other things, oh like being a newlywed, but no not me. I decided to go back to school to pursue yet another masters – which I hope will be my last! Today I celebrate the beginning steps of figuring out what I want to be when I grow up!
In honor of Cinco de Mayo I made homemade Chicken Taquitos for dinner (a new recipe) served with left over homemade Spanish rice! These were so good that I was full after one!
Chicken Taquitos
Ingredients
2 chicken breast shredded (I used left over chicken from Sunday)
6 flour tortillas
1 can diced greed chilies
1 tbsp. Philadelphia santé far cream cheese
½ c. shredded cheese
Preparation
1. Preheat over to 425*
2. Prepare chicken in skillet and pull apart with fork
3. Pour in green chilies and cream cheese
4. Microwave tortillas for 30 seconds or until soft
5. Spread thin layer of cheese on tortilla, then top with meat mixture.
6. Fold edge of tortilla over filling and roll.
7. Set on greased cooking sheet
8. Bake for 5 – 6 minutes on each side.
If you could go back to school would you? What would you go back to study?
If money were no option I would continue to go to school. I would love to get my doctorate in education or study fitness and nutrition and become a fitness instructor for fun!
