Chili Pepper


I have acquired a new nickname from my husband – chili pepper.  Yes, chili pepper because that is exactly what my legs look like right now!  According to Jake the nickname is because I am “red and hot.” All of this nice weather and a weekend full of activities not only left me tired and sore but it also left me with sun poisoning.  Yes, it’s an actual diagnoses.  You’d think that after a long winter my body would be happy to see the sun but no it rejected it!  My legs are burnt and have swollen to the point that I can barely bend them. 

The past two nights my evenings have been filled with coming home from work, taking a cold-water baking soda baths, lathering up in aloe, applying cold compresses and repeat.  Tonight was the first time that I could stand long enough to cook.  With a vengeance I decided to cook up some fish tacos tonight using the bluegills that I basked in the sun to catch on Sunday. This meal was delicious, light, and refreshing.  It was the perfect meal for this 97-degree evening!  Now, I am off to continue the healing process!
Fish Tacos

Ingredients
White Fish (bread if desired)
½ tomato, chopped
½ avocado, chopped
1-cup lettuce, shredded
½ cup cheese, shredded
Flour tortillas

Sauce
½ c. light mayo
½ sour cream
3 tbsp. cilantro, chopped
½ packet taco seasoning

Preparation
Cook fish accordingly in olive oil
Chop avocado, tomato, and lettuce.
While fish is cooking, combine sauce ingredients in bowl and stir.
Warm tortilla in microwave for 30 seconds.
Layer tortilla with lettuce, fish, tomato, avocado, and cheese.
Spread thin layer of sauce on top of fish and enjoy!



I also made homemade refried black beans to go with this meal.  They were so easy to make and definitely beat the kind you buy in a can!

Refried Black Beans

Ingredients
1 can black beans with juice
2 slices bacon
1 tbs. garlic

Preparation
Cook bacon in skillet.  (You can add bacon to beans or discard, but KEEP the DRIPPINGS)
Add garlic and cook for 1 minute.
Add black beans and mash with potato masher.
Simmer until desired consistency and serve!

  1. this fish taco recipe is easier than the one have, and haven't tried! Do you think I could just move in with you and Jake so you could cook for me too?
