Burrito Bowls - Hit the Spot!


Happy Hump Day!  Wednesday is one of my favorite days of the week!   I enjoy Wednesdays for three specific reasons: 

Reason 1:  There are only two days left in the workweek!
Reason 2:  Wednesday are early dismissal days for my kiddos meaning that I get extra time to prepare for the coming week!
Reason 3:  The weekly grocery advertisements are in the newspaper! 
Bonus Reason:  Wednesday is my day off from my workout!

So reason 3 maybe puzzling to you, but I love rushing home on Wednesdays and browsing the ads. Since I began menu planning, perusing these ads has become thrilling, as I love to find bargains and save money.  I start by looking at what is on the menu for the next week, make a list of ingredients we need, and begin searching through the ads recording which store has the deals!  Most stores will honor others ads!  We usually grocery shop on Sundays and I have discovered that just by searching the ads I can usually prepare an entire weeks worth of meals for under $30.

Now that you know about my excitement for print ads, I am sure you can understand how very disappointed I was when I discovered that our newspapers have discontinued providing the ads.  I must now view the ads via the Internet. There is so much to be said about being able to physically touch and turn the pages of the ads, hence why I do not own a kindle!  Oh well, change is good right?

Tonight I made a hearty pork burrito bowl for dinner.  I found this recipe on a blog I read frequently, Iowa Girl Eats!  I adapted it to fit our taste.  It was so filling and perfect for this gross weather we have been having!  Enjoy!



Burrito Bowl

Ingredients
1 6 oz pork lion
1 c. brown rice
1 c. black beans (rinsed and drained)
1 c. roasted corn (I use trader Joe’s)
1 lime
1 tomato
1 jalapeno
¼ c. onion
Fresh cilantro (chopped)
Salt
Pepper
1 tsp. chili powder
1 tsp. garlic powder
1 tsp. cayenne pepper
1 tsp. oregano
I Can’t Believe It’s Not Butter Spray

Preparation
1.     1. Cook rice as stated in the directions.  Add a few squirts of spray butter, juice of half of a lime, and a pinch of cilantro. 
2.     2. Grill pork and slice in small chunks.
3.     3. Drain and wash beans and combine with corn.  Add chili powder, garlic powder, cayenne pepper, and oregano.  Warm in microwave.
4.     4. In a food processor or blender, pulse tomato, jalapeno, cilantro, onion and juice of half of a lime.

Assemble
Start by putting rice in the bowl and then add the bean mixture on top.  Top with pico mixture, then pork.  I added a fresh sliced avocado to the top of ours!  Experiment and Enjoy!
