Paleo Friendly Banana Bread



Do you have a food that holds a special meaning and memory for you?  Well, banana bread does that for me!  As a child,  I remember spending weekend afternoons in the kitchen baking banana bread and banana bars with my mother, sister, and grandmother.  My sister and I would fight over who got to crack the eggs and mash the bananas!  When all was said and done, I would cut a thick slice, slather on butter, divide the piece into fourths, place it on a paper towel, and share it with my grandmother.  We'd cheers our hard work and indulge.  Still to this day, I often open my mom's freezer  to find frozen bananas just waiting for the moment that  they’ll be made into this delicious bread. 




Last evening, as I was examining my counter full of cookbooks, I came across a cookbook that is near and dear to my heart – my Grandma Irene’s go to entitled,  A Cooks Pride and Joy.




One of the best gifts I have ever received is my grandma Irene's and my Grandma Betty’s old cookbooks.  I could spend hours scouring over the pages tagged in these books trying to decipher their handwritten notes! As I perused the cover of my grandma’s cookbook, the tag – “Banana Bread Page 173” caught my eye!  I opened it up and there was my grandmother’s favorite Banana Bread recipe with handwritten annotations!  Three overly ripe bananas sat on my kitchen counter – it was meant to be!  





As the cool, crisp fall air  blew through our windows, I decided it was the perfect time to attempt to turn my grandmother’s beloved banana bread recipe into a Paleo friendly treat. 


I started by combining the dry ingredients!  Coconut Flour is a great replacement for flour.  Keep in mind that it absorbs more liquid than white flour so you do not need as much.  If a recipe calls for 2 cups of white flour, I will cut this in half and add an extra egg or other liquid. Remember you can always add more flour if needed. 


Next, I creamed together the coconut oil and coconut sugar then slowly added the eggs.  There are many mixed reviews on using Coconut Sugar in the Paleo lifestyle.  I rarely use it so I am okay with using it for a treat like this! 


Next, I alternated folding in the dry ingredients with the mashed bananas.  Finally, I put it in a greased pan and baked it for 40 minutes.   This bread turned out so moist! Jake and I have already ate the entire loaf. (Not proud to admit this!) 


Paleo Banana Bread Recipe

Ingredients
¾ cup coconut flour
1 ½ tsp. baking powder
½ tsp. baking soda
cup coconut oil
cup coconut sugar
3 eggs
3 mashed bananas

Process:
1. Combine flour, baking soda, and baking powder.
2. Cream coconut oil and sugar.  Then slowly add the eggs.
3. By hand, Alternate adding the dry ingredients and mashed bananas.
4. Stir to combine all ingredients until thoroughly mixed.
5. Pour into greased loaf pan and bake at 350* for 40 minutes.
