Happy Sunday! Sunday
is one of my favorite days of the week!
I believe that Sunday was made for sleeping a few minutes later,
enjoying one too many cups of coffee, and most importantly indulging in a
delicious brunch. Yes, Brunch! You know that meal that takes the place of
both breakfast and lunch because you took time to enjoy the morning! Yes, that meal!
I love when I can wake up on Sunday morning and not have to
rush to get out the door. As a child I
was not a morning-person! I was a -Don’t Talk To Me Before 10am - kind of morning-person.
I have gotten better with age, but even today I am more than
willing to sacrifice a decent breakfast and rushing out the door for 10 minutes of extra sleep. Hot coffee and a banana
are considered a well balanced breakfast right?
Last Sunday, Jake and I decided to brunch at a new
restaurant that opened down the street from us. Over Easy, located near 168th
and Q Street, is well worth the trip to West Omaha.

Jake ordered the
biscuits and gravy and I had the strata. The minute Jake’s dish was delivered I
was struck with order envy. It looked
delightful and the empty plate he left behind confirmed that this
deliciousness on a plate needed to be recreated.
This morning, I sipped my coffee, enjoyed some sunshine, and
got down to work. I could no longer wait
- biscuits and gravy were on the docket. Coconut flour, Coconut milk, arrowroot powder, and almond flour replace traditional ingredients to make this a Paleo friendly dish.
Start by making the biscuits. In a bowl combine the dry
ingredients.
Next, fold the chilled coconut oil into the dry
mixture. It should begin to crumble.
In a medium bowl, whisk the egg whites until they froth.
Slowly add the egg whites into the dry mixture. Using a large spoon or cookie scoop, drop the biscuit
mixture onto a greased cookie sheet and bake at 425°F for 12 minutes or until golden
on top.
While the biscuits bake, prepare the gravy. Begin by browning ground turkey or
sausage. (I used ground turkey). Remove the meat with a slotted spoon and set aside. Leave the drippings.
In the same pan, combine the milk (I used coconut milk but
almond milk will also work) and arrow powder dissolved in water. (Arrowroot powder has similar characteristics as cornstarch) Let this come to a boil and then simmer for 5 minutes. Add in the meat and season with Salt and Pepper. I also add garlic to my gravy because I love
garlic!
Most people would stop here and assemble this meal but I
decided to add some poached eggs to my meal.

Paleo Biscuits and Gravy
Turkey/Sausage
Gravy
Adapted from GI 365
Ingredients
1 lb. ground turkey or sausage
1 cup milk (use heavy coconut milk or almond milk)
2 tablespoon Arrowroot powder dissolved in 2 Tablespoon
water
Salt and Pepper to taste
Dash of Garlic Powder (if desired)
Procedure
1. Brown the ground turkey or sausage. Remove from pan with slotted spoon. Leave drippings.
2. Add milk and arrowroot powder to drippings. Bring to a boil. Simmer for 5 minutes or until desired thickness
is reached.
3. Add in sausage and
warm.
Paleo Biscuits

Healthy
Ingredients
¾ cup almond flour
½ cup coconut flour
1½ teaspoon baking powder
Pinch of Salt
2 tablespoons chilled coconut oil
8 egg whites
Procedure
1. Preheat oven to 400°F.
2. Combine all of the dry ingredients.
3. Fold in coconut oil to dry mixture.
4. Slowly add in egg
whites.
5. Drop biscuits onto greased baking sheet.
6. Bake 12 minutes or until golden brown.
7. Slice biscuits in
half. Assemble the biscuits on a plate and
top with warm gravy.
