My Sunday Funday went something like this…homework, break, homework, break, repeat. I was up bright and early this morning hoping I could capitalize on the peace and quiet of the early morning to work on homework!
I love to write! I could write all day long when things are left to my imagination, but I struggle when I am prescribed what to write about, hence way it has taken me all weekend to write 2 papers. (The fact that I am somewhat of a perfectionist also played a role).
To get my creative juices following I turned to one of my favorite kitchen appliances for help – enter my Keurig coffee maker!

I made myself an extra bold cup of coffee with skinny caramel cremer and a packet of sweetner for a some extra pep, plopped down on the couch and started the grueling process of editing my paper.
After an hour, I decided it was time for a break. Knowing Jake was still snuggled up in bed, I decided to whip up a quick egg and potato casserole hoping the aroma would slowly wake him! This recipe is one of my new favorite recipes! A must try!
Egg and Potato Casserole
Ingredients
Hashbrowns or country potatoes, thawed
5 eggs
½ c. milk
dash of onion powder
dash of garlic powder
Bacon or Sausage(I used pre-cooked bacon)
½ c. shredded cheese
add chopped vegetables if you would like
Prepartion
Preheat oven to 350 degrees.
Layer potatoes in greased 8x8 pan.
Prepare meat according to package directions or to your liking.
In a large bowl whisk together eggs, milk and seasoning.
Pour egg mixture over potatoes.
Spread half of the cheese and all of the meat on the potatoes.
Top with remaining cheese and cover with foil.
Bake for 25 minutes. Then remove foil and bake an additional 5 minutes or until knife comes out clean.
Allow to cook 5 minutes before serving.
I made great head way on my homework once my stomach was full so I decided to take a break and Jake and I headed to the Nebraska Furniture Mart.
This is our new friend –HP. Isn’t he handsome! He is way more computer than what we need, but we are hoping we will grow into him! He was much needed and long over due!
Jake gave me his pouty face when he came across this on our way out -
so now we have a new movie to watch this week! Have a wonderful Monday!
