I'm Back!


After three exhausting weeks of class that turned my world of routine and organization upside down, I’m back!  Don’t get me wrong I LOVED my class and I already miss my Cadre but I am ready to enjoy the last 3 weeks of my summer and get back to normal!

Figuring out what exactly is normal has been hard, as this is the first summer that I have not had a summer job!  Let’s just say it is an adjustment and I see lots of baking in the near future.


On Friday I decided to take Zoey for a walk around the lake near our house. 
Since I have been busy with class it’s been a while since this little lady has been on a long walk. 
At one point we were at a stand still.  It took some coaching, “Come on Zoey one more corner,” to get her to continue, but we made it!


Saturday afternoon shaped up to be a gorgeous day so Jake and I decided to meet up with some friends at the Nebraska Brewing Company to sample the local brew and continue our quest for Omaha’s Best Onion Rings!  The beer was unique but a bit bitter for my taste.  Jake and I agreed that it missed the mark compared to other local breweries in the area.  

After our sampling, we headed to the brand new Werner Park to watch the Omaha Storm Chasers take on the Memphis Redbirds!  The park is beautiful and with such great company it was hard to stay focused on the game! 

Today, Jake and I spent most of the day gathering groceries from Sam’s Club, Trader Joe’s and Hy-Vee.  It has been almost 4 weeks since we have bought groceries!  I am so happy to be able to cook again! 

While we were at Trader Joe’s we picked up some specialty cheese (Fontina, Wisconsin Cheddar, and Smoked Gouda) and some fresh bread.  We decided to make Grown-up Grilled, Grilled Cheese for dinner!  It was cheesy, melty goodness! Served with homemade sweet potato fries - mmm!

Grown-up Grilled, Grilled Cheese
Ingredients
Fresh Thick Sliced Bread
Variety of sliced cheese
Butter
Sliced Tomatoes

Preparation
1. Warm grill on lowest setting
2. Butter one side of bread
3. On side of bread without butter place cheese in layers, tomato, and avocado
4. Top with other slice of bread (butter side out)
5. Grill on low until cheese is melted

Now I am off to watch Jake make brownies a movie!

I plan on visiting Red Box frequently for the next few weeks!  Tonight we are watching Sherk Ever-After while we wait for Just Go With It to download!  I am looking for suggestions!
