Whew, what a day! Thank Goodness Tomorrow is Friday! My classroom was stirring today. Not sure if it is because of the excitement brought on by the nice weather or because we are close to the end of the year. Maybe it was from this storm that is brewing – yes children do behave differently anytime there is a full moon or a storm moving in! Whatever it was, if tomorrow is anything like today I will needed my weekly Friday latte and one of these to get through the day!
I am not a huge energy drink fan but I tried this one last week. The sleek can and the straw drew me in! The fact that it was low carb and low calorie helped too! It tasted like a sprite and was very refreshing!
Tonight I knew I had some paperwork to do for school so I decided to procrastinate –I spent some time in the kitchen making Jambalaya, bread, and brownies. Now I need to get back to my paperwork so I don’t have to tend to it over the weekend! Have a great night!
Jambalaya
Ingredients
4 oz. chicken breast diced (I cheated and bought a roisterie chicken)
Andoullie Sausage
1tsp. olive oil
1 cup frozen peppers or 1 green pepper chopped
¼ cup onion, chopped
1 clove garlic
1 can petite-diced tomatoes (drained)
3 bay leaves
¾ cup rice
2-½ cup chicken broth
Creole seasoning
Red pepper flakes
dash hot sauce
Preparation
Prepare chicken and sausage accordingly.
In large saucepan heat oil and cook onions and peppers.
Add garlic, tomatoes, bay leaves, red pepper flakes, and hot sauce.
Stir in rice and add chicken broth.
Cook on medium heat until rice is cooked through and juices are absorbed.
Add chicken and sausage to the mix and sprinkle in Creole seasoning.
Give one big stir and serve!
